It’s weird to be sitting here on a Wednesday night, thinking about two days left in the work week — I think many of us got spoiled over the last two weeks, working fewer days, working from home, and generally living the weekend life during the week days!
But, as much as I love the holidays, I have to admit that I’m a little relieved to be back on a normal schedule. Does anyone else feel that way? There were just too many yummy foods to eat, too many excuses to skip workouts, and too many mornings where I could sleep in!
Speaking of workouts … I am SO PROUD of a couple of very close friends who are competing in this weekend’s Walt Disney Half Marathon.

In particular, I am in awe of one amazing woman who has been training for almost a year to get ready — I can’t wait to see her when she comes down from snowy NY!
I’ve been a little lax in taking pictures of my food, but here are a couple of meals that were particularly droolworthy — a sprout salad that my friend Jackie brought me (YUMYUMYUM) and the biggest sweet potato I’ve ever seen:



I know the pictures stink — they’re from the camera phone. But bear with me … there are upcoming pictures taken with the good camera, and I actually found the button that I needed to fix the flash issues!
The above salad was a foodie’s dream … I forget everything that went into it but it included shelled edamame, sprouts, mung beans (I think!), onion, asian pear and some other deliciousness. I mixed it up with some spicy arugula and baby spinach, and is was heavenly. The sweet potato was great because I just threw it in the work microwave and sprinkled on some kosher salty. So yummy!
And tonight, dinner was inspired by Kath’s amazing brussels sprouts pictures. We love roasted brussels sprouts, but I’ve never thought to add maple syrup. It took an already awesome dish over the top, and I will always make it this way from now on! I should have pulled them from the oven a little earlier, because the syrup carmelized a little too much. But piled on a plate with some teriyaki udon noodles and a northen bean-spicy tomato stew … well, take a look at the goodness.




Ha, I just noticed that in the pictures, the noodles look like worms! They were great, though, organic pre-cookied beauties from Whole Foods.
As for the title of this post? Remember when I RAVED about the workouts on Exercise TV, especially the ABSolutely amazing abs? Well, I was supposed to run tonight, but it was too dark when I got home, so I revved myself up for a DVR workout. I did Jillian’s Biggest Loser Power Sculpt, a couple of fun dance videos, and then got my mat out for ab work. And the workout had disappeared! I guess Exercise TV rotates them all out, which is great for variety, but not so great when you fall in love with a video. Oh well, I found another one, and I’m still trying to get into the yoga craze that has taken over so many bloggers.
Especially if it makes me look like Jenna from Eat, Live, Run. Um, she’s bendy.
I’ll sign off with one final thought. I feel such a rush of pride for my friends that are competing at Disney this weekend, and it makes me want to put my own goal out into the universe. I am training for an Olympic distance triathlon in mid-March. If I complete it, it will come just two days before my 29th birthday, and will more than fulfill the goal I set out last fall of completing a sprint triathlon. I already did that — twice — and I know that I can push myself even harder.
So, there you go, universe. And now it’s time for bed, because I have a 5:45 am spin class that is just part of the long journey to being a triathlete.
P.S. I just wanted to make you all aware that it’s the 15th anniversary of the Tonya Harding-Jeff Gilooly beatdown on Nancy Kerrigan. WHYYYYYY?? WHYYYYY?? 15 years! Makes me feel so old.














Two things…you are my hero. Someday I’m going to take a page out of your book and start exercising. Secondly, I can’t believe the food you eat these days…such imagination and variety. You guys are awesome!
