Stay Tuned For a Big Announcement!

Make sure you read to the bottom, because I have decided to put my money, sweat, energy and maybe my sanity where my mouth is.

But first, let’s catch up! It’s been a while since I posted a blog, because work has been very busy, and I’m pretty slammed on my triathlon training schedule. Right now, that means running on Saturdays, Mondays and Wednesdays, spinning on Tuesday and Thursdays and swimming … well, that’s fallen off a bit. But I’m going to get back in the water, I swear!

Eating wise, here’s a quick low-down in pictures.

Greens, brown rice and chicken:

But it all needed something … else … so:

Yummy! It tasted just like Chinese takeout, minus the MSG. And I use Alton Brown’s easy-peasy baked rice recipe so I stick it in the oven, wait an hour, and take all the credit!

I also had a delicious butternut squash, a la Gliding Calm and Fitnessista:

Fried style! GC keeps her skins on, so I think I’ll try that next time for a little extra crunch.

Somewhere in this time period Lucas dug into the freezer for a snack, and I of course asked him to document his thoughts. So in this installment of Lukey Likey?, it’s a lean pocket and a chicken/veggie/rice burrito.

Lean Pocket:

  • good chunks of chicken
  • just enough cheese
  • crispy/flaky
  • god for anyone who likes spinach and artichoke dip
  • a lot of crust — typical of a Lean or Hot Pocket

Burrito:

  • very much like a rice and beans dish
  • rice and green/red peppers were prominent, with the chicken in the background
  • a slight bit of spice
  • a lot of wrap at the ends
  • the paper towel stuck to the burrito (yuck)

So would he eat them again? “The Lean Pocket, for sure. Of the two, I think the Lean Pocket was better. The burrito, if it was on sale, I might grab one, but I prefer the Lean Pocket,” says Lucas.

And despite the photo evidence you’re about to see, we DO eat meals that don’t include rice, beans, chicken and veggies. I apparently just don’t take pictures of them. Because on Sunday night, we did kitchen sink burritos, using FlatOut wraps, lots of yummy mix-ins, and refried beans.

Awesome. And tonight, we did whole wheat pasta with zucchini and Luke’s homemade tomato sauce.

Somewhere in there, we ate a Maple Nut Clif bar, which Lucas LOVED. Of course, he hasn’t met a Clif bar he hasn’t liked (except Chocolate Mint, but I loved it).

Enough with the food! This was a great weekend, because I got to see my goooooooood buddy Carolyn who was in town from New York State!

That’s me, Carolyn, Elizabeth, Hailey, Jackie and Katie. Elizabeth belongs to Jackie, and Hailey belongs to Katie.

And Carolyn was in town because DRUMROLL PLEASE!!!!!!!!!!!!!!!

She kicked major booty in the Walt Disney World Half Marathon! She’s such a rockstar.

We met up the day after the race and had an all-girls lunch and played catch up. And you won’t believe it … there must have been something in that black bean soup … because Carolyn (gulp) got me to sign up for next year’s half marathon! Me! A 6-mile-at-a-time-runner! But I have a year to prepare, and this gives me lots of incentive to keep running.

There’s much more to share, but that’s enough for now. Anyone in the CFL area want to run? Let me know! I need all the support I can get.

If I ran the half this year ANYONE can! But I’m warning you – running is addicting! I can’t wait to tackle this challenge with you next year. It was such a fun race to do for your first one. Great to see you this weekend!
