This is one of my favorite moments of the week. It’s just after 10pm, and that means the end to the busiest, but often most fulfilling day of the week. I truly love my job — I’m the Executive Producer of GrowingBolder.com — and it just so happens that Thursdays are PACKED! We send out our weekly newsletter every Thursday, which means lots of last-minute work to get it finished. Then when it’s sent out, I get to work letting the world know, through Facebook, Twitter and more. Once the regular work day is over, I run home for a workout (tonight, 90 minutes of yoga), make dinner (see deliciousness below), then jump into my role as moderator of a weekly online chat.
Come 10pm, I am exhausted … but I always have a smile on my face. I couldn’t have said that two years ago, when I was still working as a TV line producer. The best things about Thursdays? I was one day closer to the weekend, and a break from a job that frustrated me and made me sad.
Tonight, I couldn’t wait to get home to try out a recipe I’ve had my eye on in this cookbook:

I’m not a vegan — but I AM very careful about what I eat and where it comes from. My husband and I now only buy organic, grass-fed beef and organic, free-range chicken and chicken products. The taste difference alone would make it worth it, but knowing that we’re playing a small role in the changing attitude toward food and farmers makes us both feel good.
Because of our standards, we try to save money — and try new recipes — by going meatless several times a week. Lentils, beans, pasta, tofu, tempeh are all on our weekly menu. Our Syracuse friends would be shocked to see how much we’ve changed!
So tonight … Curried Lentils and Cauliflower. And all I can say is … YUM.
It was hot, thanks to two serrano chiles and a big scoop of curry powder. But the cauliflower and turnips helped cool it down, while red lentils gave it a great texture. I ate two hours ago and I’m still stuffed!
