Pumpkin Spice Latte Oatmeal

Ugh, patience is not a strong suit of mine…so when I woke up this morning with pain in my groin, I knew I wasn’t going to be getting in a final run before the triathlon this weekend.

I threw a mini tantrum, then decided to make the best of my early start, and I got my yoga on.

I love Exercise TV on Demand — the workouts range from simple to sweaty, and it’s a great way to get a quick session in.

This morning, I decided to try Stacy McCarthy’s Yoga Body Lean & Defined:

It was, by far, the best yoga program I’ve done for stretching. There were some tough moves in there, but mostly it was a series of stretches that made me say…

This morning, I tweeted about my new genius recipe: Pumpkin Spice Latte oats. You all probably know my love for the fall Starbucks treat:

So this morning, I set out to make Pumpkin Spice Latte oatmeal. Oh.yeah.baby.yeah.baby.

First, I brewed some really strong coffee in my french press. I cooled it down with some ice, then packed it and the deconstructed oats into tupperware, which then went into my purse:

Yeah, it’s a mess. Don’t judge.

Once at work, I took the dry ingredients:

1/2 C rolled oats

1/2 C canned pumpkin

2 t salt

2 t stevia

1 t vanilla

2t pumpkin pie spice

then mixed in the coffee (about a cup and a half), plus a splash of almond milk. Stuck it all in the microwave for 2 minutes, stirred, cooked for 2 more minutes then ate it up.

Awesome. Remember, pumpkin gives off a lot of water when it cooks, so if you don’t like watery oats, start with less liquid and add some in if you need it.

Truly, this was the caffeinated kick I needed for a long day!

Yummy food. It looks awesome. What a great idea. I am also thinking about making a green monster w/ coffee..have you done that?

Nice recipe! Might have to give it a try, where do you purchase almond milk? Sounds like that would taste pretty good by itself! Love the shirt Lucas is wearing, my sister purchased me one about a week before my wedding..
