Coo Coo for Coconuts!

by Katy on February 20, 2010

A while back, I found a big ugly green…thing.

If it didn’t have a sign telling me that this ugly thing was a “water coconut,” I never would have believed it. This is, after all, the same store that would post something like this:

Grammar. You failz it.

Anyway, the Internet confirmed that this was, in fact, a coconut. Now — how to open it? YouTube was a big help, but my honey of a house husband had his own ideas:

Coconut 05

Like anything in life, we (he) had to work hard; cracking the hard outer shelf and gently pulling aside some unattractive but supportive layers:

Coconut 01

Coconut 09

And when we did, we gloried in the goodness:

Coconut 10

We poured the lovely coconut water into a bowl and then scraped the white yumminess out with a spoon:

Coconut 14

Victorious.

Coconut 07

I’m still plotting what to do with the fresh coconut, but I had a taste for it and after a run to Whole Foods, I gave into the craving. Meet Coconut-Almond Macaroons a la Joggers Life.

Coconut Macaroons 1

I did make a few changes, substituting oat flour for the almond meal and halving the recipe. That was a mistake, since I’ve already eaten quite a few. I also made a second type of macaroon, from Everyday Raw.

Coconut Macaroons 4

They’re both amazing (and raw, since I stuck ‘em in the dehydrator — what do you think, Patti?) Ahhhhhh macaroon.

So y’all know I love my job, right? This week, I got to meet a man who blows me away with his bravery, his kindness and his SLAMMIN’ body! Would you believe this guy is about to turn 70?

Sandy Scott 14

Sandy Scott broke his neck during a horrific cycling time trial — he might have died, and probably should have stopped competing. But he didn’t, and he’s looking to set MORE records for his age group at several national events! I had an amazing day, field producing a video with him, and that will be posted on our site soon.

I’ll leave you with a picture of Travers — aka “Best Cat.” He loves wearing my medal from the OUC Half Marathon and Lucas gave him the nickname.

My mom inspires me. She raised me with all the hell I put her through and at 55 wanted to start getting healthy and has lost 15 pounds.

That coconut looks thick. The thinner and more gel-like the meat is, the younger the coconut.
The young coconut is what people make into all kinds of fresh deserts, including puddings (yum).
We open them at my store with a special, very sharp knife.
In the places that they grow, people usually whack them open with a machete.

What an inspiring story! Thanks for sharing!

My parents inspire me. But there are actually many people who inspire me. I glean from the wisdom of others and their strength and victory. What's especially inspiring to me is when someone can be in the midst of the most horrific situation, yet have a genuine smile and happy heart. Now, that's inspiring!

Hugs,
Michele

Hi Katy! Another Floridian here, finally delurking!!

Mmmmm..I love fresh coconut water and meat too…if you want an easier way to open that coconut first you just look for those three little “eyes” at one end of the coconut (the top end once you find them). Take screwdriver and just poke through those three “eyes.”

They are a lot softer than the hard shell and don't have that fibrous mess over them either, so they are pretty easy to poke through. Then pour the water out into a cup through your open holes.

Then you can crack open the nut however you want, heavy machinery, big tools…as kids we would go out to the sidewalk and throw it down a few times and that was that!

Of course if you don't want to tell you husband any of this I understand…he looks like he was having way too much fun with this!

Katy, I have to break the news to you!

Do not believe the clementines at Publix are seedless! They are not!

Target's cuties on the other hand…..

I heart clementines. I just wish they weren't so darn expensive! Maybe we could go in on a clementine timeshare together?

And where were you when the husband had a saw and a desperate look in his eye! :)

Great tips — I'll make sure he sees them for next time.

Cynthia, that's a great story — have you ever considered posting more about her? I know people like my mom would be really inspired.

I posted a bit about in in one post a bit back. But I like the idea of posting more about her. I think I will for later this week. Thanks for the encouragement Katy.
